A-Z BLOGGING CHALLENGE: P is for Parfait



My sister-in-law, Catherine, is a dietician in North Carolina. She is helping me gain a little weight. Here is one of the recipes she gave me for a great parfait.

1 C Greek Yogurt (plain, fat free)
1 C Cottage Cheese
4 Scoops Vanilla Protein Powder
4 T pecan pieces
1 C fresh berries

In a bowl use a whisk to combine yogurt, cottage cheese and protein powder. Mix well. In small containers put 1/4 C of mixture and top with berries and pecans. I eat these when I get to work each morning.


I was actually able to get 5 little containers out of this much mixture.

There are 260 calories in each serving.
