What's Cookin'...The Best (Soft) Oatmeal Cookies


I love soft cookies! This is the best recipe I have found for Oatmeal Cookies. Very easy! Enjoy!

INGREDIENTS:

1 C softened butter
1 C white sugar
1 C packed brown sugar
2 eggs
1 tsp vanilla extract
2 C flour
1 tsp baking soda
1 tsp salt
1 1/2 tsp ground cinnamon
3 C quick cooking oats

DIRECTIONS:

In a large bowl, cream together butter, both sugars, eggs and vanilla. In a seperate bowl, combine flour, baking soda, salt, and cinnamon then stir this into the creamed mixture. Mix in the oats. Cover and chill dough in refrigerator for at least one hour.

Preheat oven to 375. Roll the dough into small balls and place on greased cookie sheet. Flatten each with a fork dipped in sugar.

Bake for 8 to 10 minutes. Makes 2 dozen.
