I poke holes in the crust so it cooks totally through.
Melt the stick of butter for about 30 seconds.
Beat the sweet potatoes (or yams) to remove any strings.
Add all the dry ingredients....
...then add the wet ingredients....
and beat again until smooth...not too thin...not too thick.
Pour batter into a 9 inch pie shell, in a glass pie dish and sprinkle with cinnamon.
Bake 50-60 minutes, at 400 degrees, until knife inserted in middle comes out clean.
While we're waiting let's clean up.....
....and 60 minutes later....Voila!
